Avocado Joy

After reading the article in New York Magazine this week titled “Have You Eaten Your Last Avocado?” by Adam Sternbergh, I was so shocked to learn that avocados are becoming increasingly more difficult to grow in the US because of the large amount of water they require to thrive. It would be a sad world without this incredibly nutritious and delicious superfood in it. Since then, I’ve spent a lot of time thinking about the ways in which my life just wouldn’t be the same without avaocados in it. I simply adore avocados, and I don’t know too many people who don’t (except my dad…I know, I don’t understand either). What used to be an occasional treat when I would eat guacomole at a Mexican restaurant has become a nearly daily staple for my whole family. There are so many ways that we enjoy this fruit. Below is a noncomprehensive list of how I experience what I call Avocado Joy:

*Mashed with lemon, red pepper flakes and sea salt and spread onto multi-grain toast or rice cakes (my kids’ favorite)

*Tossed into salads – try with grapefruit and endive

*On a BLT (or any sandwich, really)- if you’re vegetarian, substitute avocado slices for the bacon

*In smoothies with almond milk, berries and ice

*On burgers (skip the mayo…or not)

*For breakfast alongside fried eggs – gives a great morning burst of energy

*For baking…YES, you can bake with avocados. Did you know that you can substitute mashed avocado for some of the butter or oil in cookies? Yes you can! Just mash and put into a measuring cup. If a recipe calls for 1 cup butter, add 1/2 cup butter and 1/2 cup avocado mash. Try it! Avocado-blueberry muffins would be a fantastic place to start!

*In ice cream…deliciously creamy and smooth

*Straight up…just peel and eat. Simple as that.
